This recipe is great because you can make it to your taste. I tend to add in walnuts and hazelnuts, you could also add in some dried fruit halfway through.
3 cups oats
1/2 cup pumpkin seeds
1/2 cup pistachios or nuts of your choice
1/2 cup sunflower seeds
1/2 cup almonds
1-2tsp ground cinnamon
1/4 tsp salt
1/2 cup maple syrup
1/4 cup olive oil
Mix everything together well and pour onto a baking sheet lined with greaseproof paper. Bake at 300F / Gas mark 2 for 40 minutes turning half way through. Cool then store in an airtight container.
I love this with mixed berries which I buy frozen and heat through in the microwave. I top it with the granola and natural yoghurt as a dessert or breakfast. Find your favourite way of eating it.
